Spaghetti bolognese – vegan 🌱 soy free – gluten free 

Macronutrients 

C 65g F11g P 14g F 10.6g – 412 kcal/serving with the wholewheat pasta

Ingrediente 

  • spaghete integrale Barilla/ fara gluten pentru cei cu intoleranta
  • 2 cepe roșii medii
  • 2 morcovi
  • 2 bete de apio
  • 100 g ciuperci champinion sau salbatice pentru o savoare mai puternica
  • 1 cățel de usturoi
  • 1/2 cub instant supa legume
  • 1 pahar de vin roșu
  • 1 cutie de roșii cuburi
  • 1 lingura de pasta de roșii
  • 1/2 mana de pătrunjel verde
  • 1 băț rozmarin verde sau 1 lingurița de uscat
  • Busuioc verde pentru plating
  • Ulei de măsline extravirgin si presat la rece
  • Sare si piper dupa gust

Ingredients

  • – Barilla spaghetti / gluten free spaghetti for those with intolerance
  • – 2 medium red onions
  • – 2 carrots
  • – 2 sticks of celery
  • – 100 g chestnut mushrooms or wild mushrooms for a stronger flavor
  • – 1 clove of garlic
  • – 1/2 cubed instant vegetable soup
  • – 1 glass of red wine
  • – 1 can of tomatoes
  • – 1 tablespoon of tomato paste
  • – 1/2 hand green parsley
  • – 1 green rosemary stick or 1 teaspoon dried
  • – Green basil for plating
  • – Cold pressed extra virgin olive oil
  • – Salt and pepper to taste

Metoda/Method 

Totul începe prin pregătirea legumelor si anume tăierea acestora in cubulețe mici, cu cat mai mărunt cu atât mai bine. Un hack ar fi trecerea acestora prin răzătoare, asta nefiind valabilă pentru ciuperci pentru care trebuie totuși folosit cuțitul 😊 dar nu disperați e acestea nu trebuie extrem de mărunt fiind ca odată ce se călesc in tigaie si pierd apa, pierd si drastic din dimensiune.

It all begins with preparing the vegetables, mainly cutting them into small cubes, the finer the better. A hack would be getting them through graters, which is not applicable for mushrooms for which the knife must still be used, but do not despair. You don’t need to chop them to fine, as once they shrink  in the skillet, with the loss of water, they lose drastically size.

 

 

Pune o oala la foc mare si odată ce asta s-a încins adăugăm circa 2-3 linguri de ulei de măsline, eu am folosit de sâmburi de struguri de data asta, dupa care adăugăm trio-ul de legume tăiate cubuleț.

Put a pot on the big fire and once this is spiking hot, add about 2-3 tablespoons of olive oil, I used grape seed because I ran out of olive oil, then add the trio of chopped vegetables.

Le lăsam la călit amestecând din cand in cand pentru ca acestea sa nu se prindă de oala pentru circa 8-10 minute, la foc mediu.

 

Intre timp intr-o tigaie tot așa dupa ce aceasta e încinsă adăugăm ciupercile fara ulei si le prajim. In felul acesta scoatem toată aroma pe care acestea sunt capabile sa o ofere.

Let them cook by stirring occasionally so that they do not stick to the bottom of the pot for about 8-10 minutes, on medium fire.

Meanwhile in a pan, just after it’s hot, add the mushrooms without oil and fry them. In this way we get out of them all the flavour they are able to offer.

Peste cubuletul instant de legume punem circa 1 l de apa fiarta pentru a face supa de legume. Daca aveți supa făcută de casa o recomand cu drag pe aceea, variata aceasta este una rapida si utila celor pentru care timpul este limitat.

Pour about 1 l of boiled water over the instant vegetable cube to make the vegetable stock. If you have a house-made stock, I highly recommend it, this is a quick and useful one for those who have limited amount of time.

Dupa ce vedeți ca ciupercile au scăzut considerabil si încep sa se prindă de fundul tigăii adăugați putina supa pentru a le desprinde iar apoi opriți focul si le puneți deoparte.

After you see that the mushrooms are considerably reduced and caramelised on the bottom of the pan, add a little stock to remove any of the mushrooms that are stuck to the pan (deglazing), then turn off the fire and set them aside.

Revenim la legumele noastre care ar trebui sa fie bine călite acum si adăugăm cam o lingura de pasta de roșii, un cățel de usturi razalit si rozmarinul tocat fin si amestecam câteva minute.

We turn our attention back to our vegetables which should be well cooked by now and add a tablespoon of tomato paste, the minced garlic and finely chopped rosemary and mix for a few minutes.

 

 

Dupa ce am incorporat bine si aceste ingrediente vine si momentul cel mai frumos. Luați acel pahar de vin si dupa ce l-ați gustat sa vedeți daca e bun 😁 adăugați-l peste. Nu va faceți griji in privința alcoolului deoarece acesta se va evapora si tot ce va rămâne este aroma unui vin de buna calitate. Eu cand gătesc cu vin mereu ajung sa beau un pahar si sa pun o muzica buna pentru a crea o ambianta plăcuta.

After incorporating well these ingredients comes the most beautiful moment. Take that glass of wine and after tasting it to see if it’s good 😁 add it in. Do not worry about alcohol because it will evaporate and everything that remains will be the flavour of a good quality wine. When I cook with wine I always drink a glass and put on some good music to create a pleasant atmosphere.

Nu e un ingredient absolut obligatoriu, cei cărora nu le place sau nu il au, il pot exclude dar nu indic acest lucru deoarece aportul la aroma si gust e foarte mare. Odată redus…

Adăugăm conserva de roșii cuburi, pe care o reumple cu supa de legum si o adăugăm si pe aceasta.

Add the canned tomato cubes, then refill it with vegetable soup and add it in.

 

 

Iar pentru următoarea jumătate de ora lasati  preparatul sa fiarbă la foc mic, timp in care puteti sa savurati acel pahar vin, verificati rețelele de socializare, poate faceti niște poze sau insta stories in care va mândriti ca ați făcut un preparat foarte gustos si imi dați si mie un tag sau folosiți hashtag-ul #lcgfood 👊🏼

Nu va relaxați prea mult ca am uitat de paste 🤦🏽‍♂️

Puneți intr-o alta oala câte un litru de apa pentru fiecare 100 g de pasta la fiert cu o lingurița de sare si doar dupa ce aceasta fierbe adăugați spaghetele pe care le lăsați conform instrucțiunilor de pe pachet.

Dupa ce sosul s-a redus substanțial adăugați o mâna de pătrunjel si daca morcovii nu sunt inca moi adăugați si restul supei si mai fierbeți.

Do not relax too much because I forgot pasta 🤦🏽‍♂️

Put in another pot a litre of water for each 100 g of the paste to boil with a teaspoon of salt and just after it get to the boiling point add the spaghetti. You leave it to cook according to the instructions on the package.

After the sauce is substantially reduced add a handful of parsley and if the carrots are still not soft add the rest of the soup and reduce it again.

Cand ajungeți la consistenta aceasta pot sa va felicit pentru ca ați realizat primul vostru ragu vegan! Booom 💥

Amestecați spaghetele cu sosul ragu si puțin apa de la paste, presărați câteva frunze de busuioc iar apoi indopati-va gurile, glumesc! Trebuie sa mâncam frumos, sa mestecam fiecare gura de mâncare cat mai mult si mai bine, sa socializam cu familia sau cu cine luam masa, sau cel puțin sa incercam! 😂

Road Trippin’ gone (w)RONG

So last weekend, we thought it would be an awesome idea to take the kiddies on a road trip to BRASOV – another county, around 5 hours from our home county. We planned on leaving Saturday morning, staying the night, visiting all the way through Sunday and then making our way home Sunday evening. It would have been great if all had went well, it was even funnier, that things went totally wrong. Here’s the thing, for some reason me and my husband are able to have full blown panic attacks over a dirty house (we like it nice and clean, no idea why we’re SO OBSESSED), however, when we are stranded and have nowhere to stay we’re simply just the type to casually laugh it off and find another way. This time the other way meant returning home at 4am with two babies. More about that later, let me just take you quickly through our day, my first impression of Brasov, a few pics we took and then the funny part at the end!

So we left earlyish on the Saturday morning, grabbed some breakfast and snacks and we were on our way! The babies were angels and slept the whole way in the car, (Lucky us right?!) after around a 4-5 hour drive we arrived in Brasov, my first impressions of this county was sincerely, how CLEAN and fresh the air seemed, historical, beautiful and something which probably others wouldn’t notice but I do is how the houses are all the same. It is so organised, orderly and picture-esque, I’d love to buy an apartment there! So we went to visit the Dinosaur park in Rasnov which of course was awesome for Ayan, he loooved it, and then after we climbed up to the old medieval castle where we were lucky enough to find and capture the most amazing sunset, with a view as far as your eyes can see and as high as the mountains can go! After a long tiring day we wanted to go to our avantgarde apartment which we had booked except it seems that it had all gone disastrously wrong, the booking site never got back to us in time, they couldn’t find us another place to stay so we found that we had NOWHERE to stay, believe it or not ALL the hotels in the area were booked for the night, so what did we do instead? Did we stress? Did we argue? NOPE. We went to the nearest supermarket (carrefour) bought some bottles of water, WASHED OUR BABIES IN THE CAR PARK (still 30+ degrees outside) went in search of pizza, put the babies to bed in their carseats and then my husband drove us home. It actually felt sooo cozy (I love night drives in the car), with music softly playing in the background, the hum of the cars engine.

ps. update on the situation, the booking site fully refunded our amount AND gave us $200 towards our next booking. So we made the most of the situation and got our money back plus more. Positivity = win/win

Turning 24 

This year I turned 24. Somehow I’m still in shock that I’m so ‘old’ on another part I feel as though 24 resembles the end of an ‘era’ to me. I looked back on my birthday and thought of the things that I had accomplished. So far, my family. A happily married mommy of 2 with a dog, a happy home and my lovely car. Material + Emotional achievements. Now from 24 onwards my wishes are to continue being just as happy, to raise my two children to my best ability and most importantly moving onto new things career and education wise. I think for now I have finished with the children and family part of my life and whilst enjoying my housewife/mom life stage I have begun to wonder what I will do next. I have no idea where life will take me, or upon which path I will stumble, for now I will just go with the wind and enjoy the journey.

 Here are a few snaps from my birthday, celebrated intimately at home where everything was done all and completely by my dear mother. 

Baby jetsetters 

So, we made it! As the time ticked by Thursday night and Ayan just couldn’t/wouldn’t sleep, I began to feel as though the whole trip would end up in a serious meltdown situation. However, although running on 0 sleep we managed to backpack, our belongings, front pack our kids, not forget anything and get to England all in one piece. Thank God for that. 

I’m not exactly sure how much time I will have to blog whilst exactly on the trip, two babies, catch up with the family, outings, shopping, legalities. I have on the other hand been documenting with videos + pics to fill you in on my days over here and of course one of the most important celebrations – my BIRTHDAY

For now, here are some snaps of Aryana on her first flight and Ayan of course. 

Packing my s*#t

Tomorrow we go to ENGLAND. That therefore means today I’m a headless, exhausted chicken. It’s precisely 23.11pm neaaarly everything is done, hopefully I haven’t forgotten anything, if I have I’ll most likely blame it on my husband because truly, that’s what they’re their for. I still have to tidy up the house, although I did spend the whole day cleaning it in the first place, how does it get so messy?!?! My right boob hurts so I’m praying I don’t get mastitis again. Note to self: must not forget PUMP. 

It’s Aryana’s first flight tomorrow and our first flight as a four, I wonder how it will go? So far, so good, however, ‘the calm before the storm’ keeps running through my head. Anyways I better run and see if I manage to get some sleep. Must wear make up tomorrow so I don’t scare other passengers with my scary eye bags. Must remember pump. Must not panic. Must not try to miss Cliffy every few minutes. Must get at least a couple of hours sleep if I can before I go. 

Oh yeah, the flight is at 6. This should be fun. Catch you later on the blog DEFINITELY with a coffee as I’ll be on the plane. But until then take a browse at my first birthday cake of this year. Those who know me know that I always for some reason without fail end up with more than one cake. This one was from my mini- dinner party at my in laws. Truly spoilt, dinner, cake + present wise.

Should we forget ourselves when we become mothers?

Somtimes as mothers, we get so lost in ‘being mothers’ that we completely forget to take care of ourselves. We get lost in the whirlwind  of making sure our little loved ones have all their needs met, that they are forever first on our priority list and we truly forget that we are human beings also, that albeit few, may have needs too.

The ability to put your children before you in every way is one of the most beautiful abilities a woman can have, not only does it mean that you are a selfless, loving and nurturing soul, but it also means that your children are lucky to have such a personality as a role model in life. However (there always is a ‘however’), maybe as mothers’ we never realise that sometimes forgetting about ourselves and who we are as an individual can have a negative effect on our children too.

I believe ever so strongly that in order to make others happy around us, we must truly be happy and fulfilled within ourselves – I believe this even more so when it comes to our children. I want to make mothers out there realise that, being a mother and being YOU although can be mixed are two separate parts of life, one dependant on the other. A happy and fulfilled you, automatically makes a happy and positive mother. I came to learn this with my own personal experience as a first time mother with my wonderful baby boy…

…At some point in his first year of life I lost myself and I thought I could only be a great mother if it was all about him. I for sure didn’t do anything for me as I would be overpowered with feelings of guilt and would feel selfish. How dare I do something for myself? As you read this I am sure a lot of you can relate to these feelings, especially as first time mothers. In time I came to realise that in my goal of being the ‘perfect mother’, I was actually making myself miserable because I was losing myself and if I was miserable my little baby was only soaking up these emotions and for sure it could only have negatively affected him, feeling his mother so frustrated (never underestimate your child, they feel EVERYTHING).

So after he was a year old and I realised that my initial supermom tactics weren’t working I decided to take another route, I started doing little things here and there that made ME happy, they didn’t have to be time consuming, just little things that I could identify ME with, such as, getting my nails done, taking 20 minutes in the morning to actually do my make-up, making myself my favourite breakfast on the weekend instead of just eating leftovers etc. you see, making yourself happy doesn’t mean getting a pamper session at a spa every day of the week, but instead, remembering who you are and the things you like the most and trying to incorporate them into your everyday life. Sure enough I started being a much more happier and fulfilled version of myself and I saw a much happier and fulfilled baby as a reflection of my actions.

Our children are our mirrors, a reflection of our innermost feelings because long before they can even speak they can pick up on how we are feeling internally, so use your children as an indicator of the vibes which you may be giving out.

If you’ve ever travelled by plane before you’ll know that they state, in case of emergency, always fit YOUR oxygen mask first and only THEN proceed to helping your child/children. Do you know why they do that? Because in this scenario unless you are breathing well first you cannot help your children to fit the oxygen masks and enable them to breathe safely too. You must take care of yourself first in order to be able to care for your little loved ones. And yes, that does apply to every day life.

So remember doing little things or making little changes, starting from pregnancy and throughout the rest of your childrens’ lives can make the biggest difference in all of your lives. So throughout the Pregnancy Diaries I will be posting all kinds of little tips on what I do to make myself the happiest mother, whether that includes eating well, organisation skills, family activities, all the little components of every day, that add up to make our life. YOUR LIFE, so live it well, full of positive energy and happy vibes!

Amateur Parents

Can we really say that we ever know a person? A person changes with life events, emotions, hormones, maturity and so many other factors. We as humans are never the same person we were yesterday because we are not robots, whether we are forever changiing for the better or the worst (maybe a bit of both?!). One thing for sure is, that we are always changing. 

A great example of this in my life, was when I became a parent, I truly thought I knew Mihai (my husband), but then again how could I know every part of him? I didn’t know him as a father as he’d never been in played that role before. So when we did finally become parents to our little love, I saw yet another side of him that I’d never seen before, in the link below are just a few things which we learnt about each other POST baby. Some cute, and some not so cute. Every one a learning curve 🙂 Enjoy!
